Besan Halwa





Halwa brings to mind festivities, color, family and traditions. Typically an Indian sweet, rich, sticky and fragrant.....the flavours burst in your mouth with every mouthful. The cardamom in this sweet adds that wonderful aroma.One word of caution though,don't scrimp on the ghee or you'll regret it for the rest of your life.This is my mother’s version, takes minutes to whip up if faced with a sudden urge to satiate those taste buds. And, since it’s my first post, I dedicate it to my darling mom!!! This one's for you...
Ingredients
1 cup besan (chickpea flour)1/2 cup sugar (more if you a have a dominant sweet tooth)
1/2 cup ghee
1/2 cup water
1/2 tsp cardamom powder
6 almonds, cut into slivers


Method
Melt half the ghee in a heavy bottom wide vessel. Add the besan and roast it till your kitchen smells fragrant. Keep stirring over a low flame till it turns a deep golden brown. Remove from flame.

Combine sugar and ½ cup water in a pan to form sugar syrup. Add the besan powder, stirring constantly. Add ghee; keep mixing till mixture looks glossy. Add cardamom powder and remove from heat. Spread the mixture on a tray. Sprinkle with the almond slivers. Let cool completely and cut into squares. Serve warm/cold.
